The Downing Clinic - Spinach Rice Stuffing

This is a great side dish to use with baked chicken or turkey!

Butter or olive oil
Scallions (chopped)
Walnuts (chopped)
Garlic (minced)
Bacon (uncured - no nitrates or nitrites)
Rosemary
Savory
Thyme
Ricotta cheese
Fresh spinach (cooked, squeezed dry and chopped)
Brown rice (cooked - may add herbs and garlic to the water when cooking)
Parmesan cheese
Fontina cheese or Asiago cheese
Broth (Chicken, Turkey or Vegetable)
 
1 Melt butter, saute garlic lightly and add walnuts, and bacon. Cook and stir over low heat for 5 minutes and remove from heat.

2 Cook rice in broth with spices.

3 In a large bowl, mix cooked rice, spinach, cheeses and herbs. Add sauteed onion mixture and mix. Place in a shallow baking dish and bake at 325° F for about 1 hour. Then serve.
