- Mix all dry ingredients in a bowl (flour, oats and raisins).
- Mix Tofu, eggs, oil, honey and spices, etc. in a blender until smooth.
- Pour blended mixture into flour mixture. Stir to combine. Fill oiled muffin tins (or used cup cake liners) 2/3’s full.
- Bake at 425° F for 12-15 minutes (until a toothpick comes out clean). Makes 12 muffins.
