The Downing Clinic – Polenta Pie

 
1 ½ cups 
Water
1 dash 
Japanese soy sauce
2 Tbs 
Dried onion flakes
1 tsp 
Chopped cilantro
½ cup 
Whole Grain Organic Polenta (dry)
1 cup 
Monterey Jack cheese
1 cup 
Salsa
½ cup 
Fresh Cilantro, chopped (optional as a topping)
  1. Boil water, add polenta, cook until thick and cool slightly. Spread and flatten into 8 inch pie pan that has been lightly oiled with olive oil. Shaping sides by pushing dough to form and edge.
  2. Spread with 1 cup of grated Organic Monterey Jack Cheese
  3. Bake at 350° F for 15 minutes
  4. Prior to serving, run under broiler for 5 minutes to brown slightly. Sprinkle with chopped cilantro, if desired. Serve with salsa. Serves 4 as a meal or 8 as an appetizer.
