This is a great side dish to use with baked chicken or turkey!
4 tbs
Butter or olive oil

Scallions (chopped)
1½ cups
Walnuts (chopped)
4 cloves
Garlic (minced)
2 strips
Bacon (uncured – no nitrates or nitrites)
1 tsp
Rosemary
1 tsp
Savory
1 tsp
Thyme
1½ lbs
Ricotta cheese
2 lbs
Fresh spinach (cooked, squeezed dry and chopped)
2 cups
Brown rice (cooked – may add herbs and garlic to the water when cooking)

Parmesan cheese
4 oz
Fontina cheese or Asiago cheese

Broth (Chicken, Turkey or Vegetable)
- Melt butter, saute onions lightly and add walnuts, and bacon. Cook and stir over low heat for 5 minutes and remove from heat.
- In a large bowl, mix cooked rice, spinach, cheeses and herbs. Add sauteed onion mixture and mix. Place in a shallow baking dish and bake at 325° F for about 1 hour. Then serve.
